St. Peters is the exception in St. Charles County. Everywhere else in the county, the county health department inspects restaurants. Inside St. Peters city limits, the city’s own health department does.

Before you build or buy equipment

Call the city health department before you sign a lease or order equipment, and ask for the city’s “Opening a Business in St. Peters” guide. Have these ready:

  • A floor plan showing every piece of equipment, hand sink, three-compartment sink, mop sink and floor drain
  • Equipment spec sheets showing NSF/ANSI or ETL Sanitation certification
  • Your menu, so reviewers can check refrigeration, hot holding and cooling capacity
  • Plumbing details: water heater size, indirect drains on ice machines and prep sinks, backflow prevention
  • Finish schedule for floors, walls and ceilings

How inspections are scored

  • Core violations cost 2 points and critical violations cost 5 points
  • Critical violations usually get a follow-up inspection within about 10 days
  • Inspection reports are public on the city’s CitizenServe portal

Other offices you’ll deal with

  • City of St. Peters for business license, zoning and building permits
  • Your fire district for hood and fire suppression (NFPA 96 / UL 300)
  • Your sewer provider for grease interceptor requirements
